Herbed Tofu on Crackers
Serves 8-10
Ingredients

1 packet of Nutrisoy Plain Tofu (350g), crushed until smooth

2 tbsp olive oil

1 small brown onion, finely chopped

1 tsp curry powder
-
1 tsp ground paprika
-
½ tsp chilli powder (optional)

Salt and pepper to taste

1 cup baby spinach
-
5 sun-dried tomatoes, cut into halves or thirds

Method

Heat the oil in a large frying pan or medium wok over medium heat.

Add the onion and fry for 1 minute, then add the tofu, stir fry for 1-2 minutes until heated through.

Add the curry powder, ground paprika, chilli powder, salt and pepper.

Add the spinach and stir for 1 minute or until wilted and let the tofu mixture simmer. Remove from the heat, allow to cool slightly.

To serve, make a sandwich out of two crackers filled with tofu mixture and top with a slice of sun dried tomato.
