Tempeh Burger
Serves 3
Ingredients
-
1 packet of Nutrisoy Tempeh Burger (200g); cut to fit the burger bun

1 tbsp (14g) butter
-
1 clove of garlic
-
1 slice of pumpkin (no thicker than 1 cm)

1 burger bun or fresh bread roll
-
1 tsp basil pesto
-
A handful of baby spinach and rocket
-
1-2 pieces preserved roasted capsicum
-
1 tbsp pepita seeds
Method

In a frying pan, place butter and garlic over medium heat and stir.

Coat pumpkin in butter and leave in the frying pan to char slightly on both sides.

Remove pumpkin and garlic from the pan.

Grill or shallow fry the tempeh until heated through.

Stack all the ingredients on the bun, starting with a smear of pesto, spinach and rocket, pumpkin, tempeh burger, capsicum, pepita seeds and finally the bun lid.
