Teriyaki Tofu Stir-Fry
Serves 4-6
Ingredients

1 packet of Nutrisoy Teriyaki Tofu or Soyco Japanese Tofu (200g), sliced into long strips

1 tbsp vegetable oil

½ tbsp garlic, crushed

1 small onion, sliced

½ small red capsicum, cut into thin strips

½ carrots, cut into thin strips

1 celery, thinly sliced
-
3 shiitake mushrooms, sliced

1 bunch of baby bok choy, sliced

1 small broccoli, cut into florets
-
¼ Chinese cabbage, shredded
-
1 tbsp light soy sauce
-
1 tsp of sesame oil

Pinch of white pepper
Method

Heat the oil in a preheated frying pan or wok over medium to high heat.

Add the garlic, onion, capsicum, carrots, celery and mushrooms and cook for 1-2 minutes.

Add tofu and the rest of the vegetables, continue stirring for 1 minute.

Add pepper, soy sauce and sesame oil, stir for another minute until all heated through. Serve.
