Vegetarian Rice Paper Rolls
Ingredients

Soyco Malaysian Peanut Satay Tofu (200g) OR Soyco Chinese Honey Soy Tofu (200g) OR Nutrisoy Tasty Tempeh (300g)

1 sliced or grated carrot

1/2 sliced red capsicum

1 lettuce cut into narrow strips

1 cup Vietnamese mint leaves

1 cup coriander leaves

12 sheets rice paper

Toasted sesame seeds

Sweet chilli, peanut or hoisin sauce
Method

Heat 1 spoon of cooking oil in a small frying pan over medium heat. Add garlic. Saute to soften garlic.

Add strips of tofu or tempeh to the frying pan sprinkle with sesame seeds and cook until brown and tofu/tempeh has gained a slight crisp skin.

Set side to cool.

In a shallow dish (that will fit the rice paper sheet) add cold water about 3 cm high.

Dip and coat the rice paper sheet in the water completely and place on a plate. Repeat this process with 4 more sheets.

Imagine a square who’s corners touch the edge of the circle. Place all ingredients towards the bottom of the square (closest to you) making sure that all ingredients remain within the sides of the “square”. Fold the two sides of the Rice paper sheet over the filling ingredients, then starting from the bottom edge (edge closest to you) roll up the sheet. Make sure to keep the sides tucked in as you go.

Place roll on a plate with the seam facing down.

Dip another sheet in the water to replace the one you have just used.

Repeat this process for each roll.

Serve with sweet chilli, peanut or hoisin sauce.
