Sweetcorn and Tofu Fritters
Makes 8-10 fritters
Ingredients

200g Nutrisoy or Soyco Organic Plain Tofu, diced into very small cubes
-
Fresh corn kernels cut from 2 medium size corn cobs

2 small cans of creamed corn
-
3 spring onions, finely sliced
-
2 cloves of garlic, crushed
-
1 small brown onion, finely chopped
-
100g plain flour
-
2 eggs, lightly beaten
-
1 tsp sugar
-
Salt and pepper to taste

1 large red chilli, finely sliced (optional)

Vegetable oil for frying
Method

In a bowl, mix all the ingredients until combined well.

Meanwhile, heat oil in a deep frying pan or a wok until a slight ripple effect occurs on surface of oil.

Carefully drop heaped tablespoons of batter into the pan/wok. Cook in batches for 3-4 minutes on each side or until golden brown.
